Bottled the blue scorpion sauce tonight. The heat builds and lingers. It is sweet and sour and has intense umami. I can't wait to put it on some wings. The thyme is amazing with the blueberries. I'll definitely be making more hot sauces with herbs. More ferments with herbs. It is a bit runny and watery, but the flavor is intense.
