The fermentation shelf is getting full. I can't fit I all into the pic. Brines, kombucha, hot sauces, daikon, ginger bugs, and ketchup. All of it looking good. I pulled the peach cayenne hot sauce and preserved lemons for dinner. I used 1/4 of a lemon, thyme, and a minced fermented garlic clove in hamburger. Formed into a party and grilled. Unbelievable. Cooked down by half then refilled with more apples. This will cook for 6 more hours. Then I'll taste and add sugar and spices.

Been a backer since 2011. Officially done with @kickstarter if you are anti-union you aren't there for your employees and I can't support you. I will not back or rejoin until they change their stance. I used to be anti-union. I had been a member of an ineffective union when I was a teacher and them got a job with an anti-union company. The longer I worked there the worse conditions got and the worse my benefit became. The employees had no power and no way to fight for better benefits. Eventually I left and went back to school, but it was a learning experience. If you have never been in a union or have never had need for one you don't get it. I made a lot of bad statements and had bad ideas based off my bad experience. I'm older and wiser and 100% pro union. And against companies that are publicly willing to announce that they are anti union.

Last night's apples have cooked down by half. I'm going to add more before I add any sugar. I will put 2 cups of plain unseasoned into a vac bag and freeze it for making a brisket or other slow cooked piece of beef. The rest will get sugar and lots of spices. Nutmeg, cinnamon, allspice, ginger, vanilla, and cardamom. That'll get put into jars hot and pressure canned. #fermentstuff #preserved #urbanoasis #citysteading #cityfarm #ruralandurbantogether

This was a whim. 5 thai hybrids seeded, 2 habaneros seeded, 1 lemon zester and juiced, 2.5 cups of pureed red bell, 5 cloves of garlic crushed and chopped. Inocculated with radish brine. not totally pureed together because of the narrow mouth jar.
