Not quite there. Will cook this on high for another 4 hours, then let it simmer until I get home. The lid is turned to allow venting (love the oval shape) and covered with a flour sack towel to keep it clean. Just realized I forgot to reserve my 2 cups of plain. :( oh well. The fermentation shelf is getting full. I can't fit I all into the pic. Brines, kombucha, hot sauces, daikon, ginger bugs, and ketchup. All of it looking good. I pulled the peach cayenne hot sauce and preserved lemons for dinner. I used 1/4 of a lemon, thyme, and a minced fermented garlic clove in hamburger. Formed into a party and grilled. Unbelievable. Been a backer since 2011. Officially done with @kickstarter if you are anti-union you aren't there for your employees and I can't support you. I will not back or rejoin until they change their stance. I used to be anti-union. I had been a member of an ineffective union when I was a teacher and them got a job with an anti-union company. The longer I worked there the worse conditions got and the worse my benefit became. The employees had no power and no way to fight for better benefits. Eventually I left and went back to school, but it was a learning experience. If you have never been in a union or have never had need for one you don't get it. I made a lot of bad statements and had bad ideas based off my bad experience. I'm older and wiser and 100% pro union. And against companies that are publicly willing to announce that they are anti union.

Last night's apples have cooked down by half. I'm going to add more before I add any sugar. I will put 2 cups of plain unseasoned into a vac bag and freeze it for making a brisket or other slow cooked piece of beef. The rest will get sugar and lots of spices. Nutmeg, cinnamon, allspice, ginger, vanilla, and cardamom. That'll get put into jars hot and pressure canned. #fermentstuff #preserved #urbanoasis #citysteading #cityfarm #ruralandurbantogether

This was a whim. 5 thai hybrids seeded, 2 habaneros seeded, 1 lemon zester and juiced, 2.5 cups of pureed red bell, 5 cloves of garlic crushed and chopped. Inocculated with radish brine. not totally pureed together because of the narrow mouth jar. My "basic" Halloween pumpkin spice ghost pepper hot sauce. It's going to ferment for a few weeks and we'll see how hot this is. I tested it and the roasted pumpkin added a lot to the flavor, the pumpkin spice was nice and the ghost pepper was pretty mellow. 4 of them in this half gallon Mason jar. I added a bunch of sweet bell peppers to give it more pepper flavor. The taste I had was great. The honey fermented garlic looks amazing.the jar tipped over and about a tablespoon of it leaked out. The homebrew airlock is still working and definitely slowed the flow of honey out. I don't know what I'm going to cook with it but some of this is getting used this weekend. The garlic has started to change color into amber color of the honey. Daikon fermenting. Roughly 1 gal (1.7kg) with a 5% brine. Inocculated with some juice from my last radish ferment. An odd pairing? Or perfect? I've been thinking a lot about quality and what performance means. Here we've got a premium journal- @baronfig Clear plus and a bottom barrel (priced anyway) pencil the Pen + Gear. To me the most important factor in determining quality is performance but also will I use it. I hesitate to use the clear plus (listen to the next ep of RSVP for more on this) but reach for it and the P+G pencil again and again. The both work and feel good to use. I used that pencil down to Steinbeck stage and didn't think to grab another pencil at work. The Clear plus I hesitate but use because it's quality feels good. The size is great, but it is intimidatingly nice. Pondering all this. Should do a blog post. #stationery #penaddict #RSVPstationerypodcast #pencils

Perfect pear. Tiny but tasty. #urbanoasis #citysteading #cityfarm thinking about fermenting a few if these to use as marinade over the winter. Pears have enzymes that work really well for breaking down meats so they get tender and juicy. It will be interesting to see how they work when fermented. Not this one though, this on is going to be eaten.

Raspberries are a crop I grow 100% for myself, my wife does not like them. These goldies usually everbearing, that is, they produce a crop in both early summer and another in the fall. This year my goldies are producing only 1 crop. The neighbor's annihilation of his yard and I suspect chemical spraying stressed them out. But they are covered in fruit and starting to ripen. I dont think I'll get enough to make jam, but do plan to spread the plants around the yard. #urbanoasis #citysteading #cityfarm I might try to ferment a few, NOMA style.
