We were supposed to have a.big storm roll through here, but we've gotten mostly rain. But I like to make broth or soup on gross nights like this. This has the last of the Turkey bones and Turkey in it.plus a container of broth fixings I toss into the freezer. When I cook and I have carrot peels, ends of celery, and onion pieces all or that goes into a tub I keep in the freezer. I have another with chicken skin and bones. This had a tub of those scraps, plus a few pieces of fresh celery and a couple of carrots, an onion, garlic, and a handful of spices and ginger. I'm going for a pho like flavor. The house smells like pho. This will get jarred into quart Mason jars while boiling. I may then hot water can it. But if I'm honest this won't need to be canned, well go through it in 2 weeks or so. Im thinking of making another batch of kimchi soup, and this will be great with it. We may also do some pho with it. Or add some miso. Or maybe I'll make some fresh ramen.
